Dr. Denis Lairon is Emeritus research Director at INSERM (French National institute of health and medical research) and belong to the "Nutrition, Obesity and cardio-vascular risk" joint laboratory at faculty of medicine, Aix-Marseille University, Marseille. He has been working in human nutrition on links between diet and diseases/risk factors, Mediterranean diet and health, with about 200 original scientific articles. He worked on the nutritional quality of organic foods, coordinated the French Food safety agency report of organic foods and is one of the senior scientists conducting the large BioNutrinet cohort follow-up on organic food consumption, lifestyle and health. He is a member of the Scientific council of Organic agriculture (Ministry of agriculture) in France. He collaborated with FAO at the time of sustainable diet definition. He has been the Vice-president of the French nutrition society and Vice-president and President of the Federation of European Nutrition Societies. He is living close to Aix-en-Provence, France and grows organically vegetables, fruits and olives, laying hens.

Dr Hassanein is a senior consultant in Endocrinology and Diabetes at Dubai Hospital, Dubai, UAE since 2014. He holds an Academic post of Senior Lecturer, and Associate Director for Postgraduate Diabetes Education, Cardiff University. UK since 2007and was appointed to the post of Consultant in the Department of Endocrinology and Diabetes at BCUHB, UK, in 2002. Dr Hassanein graduated from the Faculty of Medicine, Alexandria, Egypt. His main research interest is in the field of diabetes and Ramadan. He co-authored recommendations papers on this subject for the American Diabetes Association (ADA) in 2005 and 2010, and for the British Medical Journal in 2010 as well as the IDF-DAR practical guidelines, 2016. Dr Hassanein has participated as the first author and/or a co-author in numerous studies in this field. He has published over 70 papers and has presented more than 50 oral presentations at national and international meetings.

Tsann-Long Hwang is an attending faculty and surgeon in general surgery in Chang Gung Memorial Hospital in Taipei, Taiwan, where he was also the director of the Pancreatic Cancer Team, and Chairman of the Committee of Enteral and Parenteral Nutrition and Committee of Stem Cells and Tissue Engineering Research. He is also a Professor of surgery in the Chang Gung University; College of Medicine, in Taiwan. Professor Hwang got International Visiting Professorship Award of the Association of Academic Surgery in 2009. He has published more than 300 papers in peer-reviewed journals. He has contributed extensively in professional activities in his areas of expertise. He is past vice President of World ICS, and the chairman of the Pancreatic Cancer Group of the Taiwan Cooperative Oncology Group. He is also the editor of Nutrition, Journal of Hepato-Biliary Pancreatic Sciences, World Journal of Gastrointestinal Oncology, Asian Journal of Surgery, and Formosan Journal of Surgery.

Dr. Xu is a Chair Professor in Beijing Normal University-Hong Kong Baptist University United International College (UIC, a full English teaching college in China), Zhuhai Scholar Distinguished Professor, Department Head of Department of Life Sciences, Program Director of Food Science and Technology Program, author of over 290 peer-reviewed papers. Dr. Xu received Ph.D. in Food Science from Chungnam National University, South Korea. He conducted postdoctoral research work in North Dakota State University (NDSU), Purdue University, and Gerald P. Murphy Cancer Foundation in USA during 2005-2009. He did short-term visiting research in NDSU in 2012, and University Georgia in 2014, and followed by visiting research during his sabbatical leave (7 months) in Pennsylvania State University in USA in 2016. Dr. Xu is serving as Associate Editor-in-Chief of Food Science and Human Wellness, Associate Editor of Food Research International, Associate Editor of Food Frontiers, and Guest Editor for special issues of Antioxidants, International Journal of Molecular Sciences, Molecules, the Editorial Board member of around 10 international journals. Dr. Anthony C Hackney is a full professor at the University of North Carolina at Chapel Hill in the Department of Exercise & Sport Science, with a joint appointment in the Department of Nutrition-School of Public Health and several adjunct appointments in the UNC School of Medicine. He also holds faculty appointments in several universities in Latin America. He has over 200 published research articles and book chapters, is a fellow in the American College of Sports Medicine and the National Academy of Kinesiology, and a member of the Physiological Society of Great Britain and the American Physiological Society. He is a three time recipient of Fulbright Scholar awards from the US Department of State, having served in Eastern Europe. He has also been awarded numerous teaching, service and research awards from UNC, as well as from universities overseas and international organizations, and to date, he has lectured and conducted research in 40 countries.

Dr. Buttar is the author/co-author of ten book chapters, one monograph, and 112 research and review papers published in peer-reviewed journals. Prof. Giuseppe Merra is a specialist in Internal Medicine. It mainly deals with irritable bowel, intestinal dysbiosis, gastritis, pancreatitis, obesity and metabolic syndrome. Specializing in 2009 in Internal Medicine at the Catholic University of the Holy Sisters of Rome, he obtained a Master's Degree in Dietetics and Nutrition at the same Institution. Justyna Godos's primary research focuses on how nutritional factors relate to human health and her key disciplinary area is nutritional epidemiology. She published nearly 100 scientific articles and she is mostly known for her research into the health benefits of polyphenols containing foods and beverages. Much of her recent work is centered on establishing the link between modifiable risk factors, such as nutrition, and mental health.

Dr. Akhtar Khan is Director of the Nutritional Physiology & Toxicology division, INSERM UMR 1231, University de Bourgogne, Dijon, France. He is also professor of Physiology (Exceptional Class). He had worked at Institute of Immunology (Munchen), Neurology Institute (Mexico) and Chiba University (Japan). He has a long experience of guiding PhD students. He has been working on non-communicable diseases, particularly on gene-nutrient interaction in obesity via tongue-brain-axis. The taste sensor/CD36 genetic polymorphism in obese subjects is associated with high oro-sensory detection thresholds for dietary fat, and this phenomenon contributes to the aggravation of obesity. These clinical studies have been conducted on Algerian, Tunisian, Moroccan and Czech populations where junk-food intake is rapidly growing up. At present, his team is not only exploring the use of plant ingredients but also synthesizing new class of agents, as “fat taste modifiers” that will bring no calories and can be used to decrease the fat-eating behavior in obese and diabetic-obese subjects.

Maria Alexandra Brito is Associate Professor with Tenure at the Faculty of Pharmacy, University of Lisbon, and Group Leader of the Neurovascular Laboratory at imed. Her major research interests are the Blood-Brain Barrier (BBB) and neurovascular alterations in brain pathologies, including brain tumors and neurodegenerative diseases. She has studied micro vascular dysfunction as determinant of disease pathogenesis and progression, and the BBB as a source of peripheral biomarkers, a target for modulation, and an obstacle to transpose to achieve therapeutic concentrations in the brain. Her work has involved biological assays relying on the use of BBB based in vitro models of increasing complexity, animal models and patients derived samples. She has also extensively studied BBB properties to ascertain the efficacy of drug candidates and natural compounds to modulate or cross the BBB and exert the intended neuroprotective or therapeutic action. Moreover, the has allied biological assays to bioinformatics tools to discover novel players in disease pathogenesis and unravel therapeutic targets. Currently, she is involved in the development of novel therapeutic strategies to prevent or treat breast cancer brain metastases by targeting the BBB. Maria Alexandra Brito's work has been presented in reputed scientific meetings and published in high impact journals, and has been awarded several grants and prizes.

Dr. Julia Rodriguez Castelan is Professor and researcher of the academic division of Medicine and Nutrition of the Universidad Cristobal Colon (UCC), and an independent consultant in Mexico. She obtained her degree in Nutrition in 2012 and her Master and Ph.D. in Biological Science2014 and 2017 respectively of the Universidad Autonoma de Tlaxcala. She did research stays at the National School of Biological Sciences of the Instituto Politecnico Nacional (IPN), at the Faculty of Chemistry of the Universidad Nacional Autonoma de Mexico (UNAM) and at the Institute of Biomedical Research of the UNAM. Subsequently, she did postdoctoral work at the Institute of Neurobiology of UNAM. Her research has focused on the effects of thyroid hormones and iodine compounds on the metabolism and histology of various tissues in women. These include the liver, pancreas and reproductive tissues. Over the course of their careers, they have carried out extensive research and published their findings in prestigious, peer-reviewed journals. In addition, she has presented at prestigious conferences worldwide. She is currently working on analyzing the effects of metabolic syndrome on female metabolic and reproductive histology.

Ana Novo Barros is an Assistant Professor with Habilitation from the University of Tra-os-Montes and Alto Douro. She has been the Director of the Centre for the Research and Technology of Agro-Environmental and Biological Sciences (CITAB) for 5 years (May 2017-July 2022) and of the Institute for Innovation, Capacity building and Sustainability of Agri-Food production (Inov4Agro) for one year and a half (January 2021-July 2022). She is responsible for the Phytochemicals Laboratory, and the Coordinator of the Agri-Food Quality Group. Her research targets are mainly in the identification, separation, and recovery of functional molecules from different natural products, as well as their implementation as ingredients and bioactive compounds in food, with an ultimate goal to extract high added-value molecules and re-use them in the food chain (from agriculture to the consumer). In the last years, I was awarded several prizes and distinctions. She has published more than 100 scientific documents, including research articles, reviews, and editorials, within the highest impact factor journals in the Food Science and Technology field (26 h-index, SCOPUS, September 2022). She was the editor of 2 books and has written several book chapters. She has registered 8 national patents. She is an editorial member of Antioxidants and Frontiers and has Special Issues in Molecules and Antioxidants journals. At the moment, she is also a guest editor of several special issues in MDPI and IntechOpen. She has international collaborations and is a PI and member of several FINANCED RESEARCH PROJECTS with different typologies (last 5 years). Raffaele Pilla, Pharm.D., Ph.D., Doctor Europaeus, received his Master's degree in Pharmacy at G. d'Annunzio University in Chieti-Pescara, Italy in 2005, where he also served internships at the Cell Physiology Laboratory and Molecular Biology Laboratory. Prior, he was an Erasmus Student at Faculte de Pharmacie de Reims in Reims, France. He received his Doctor Europaeus in 2010 from Pitie-Salpetriere Institute in Paris, France. Also in 2010, he received his Ph.D. in Biochemistry, Physiology, and Pathology of Muscle at G. d'Annunzio University in Chieti-Pescara, Italy. He was hired as a Postdoctoral Scholar in the Department of Pharmacology and Physiology at the University of South Florida in Tampa, on two research grants funded by the Office of Naval Research (US Navy) and Divers' Alert Network. He has written and lectured widely worldwide. He has been involved in ongoing research at the University of South Florida with the use of ketone esters.

Graduated in Nutrition from the Federal University of Santa Catarina (1987), Master's degree in Food Science from the Federal University of Santa Catarina (1992) and PhD in Biological Sciences (Physiology) from the Federal University of Rio Grande do Sul (1998). She was a postdoctoral fellow at the Moores Cancer Center at the University of California San Diego (2013-2014). She was Coordinator (2016-2021) and Sub-Coordinator (2015-2016) of the Graduate Program in Nutrition-UFSC. She has been a Full Professor at the Federal University of Santa Catarina since June 2015, working in the Undergraduate, Master and Doctorate courses in Nutrition. Prof. Mario Allegra studied Chemistry and Pharmaceutical Technologies at the University of Palermo, Italy and graduated as MPharm in 1998. He then joined the research group of Prof. Perretti at Queen Mary's University of London and afterwards returned to the University of Palermo where he received his PhD degree in Molecular Medicine. He is currently Associate Professor of Biochemistry and has published more than 70 research articles in SCI(E) journals and has an h index of 30. He manages his own enterprise of environment & food safety consulting and vocational education seventeen years ago. He has been general manager in rural development public institutions and expert consultant for rural development in Peru and Bolivia. He has been Visiting Professor in University of Kuala Lumpur (Malaysia) and University Technological Metropolitan (Chile). He is a Buildings, Infrastructures and Projects for Rural and Environmental Engineering Research Group member in University Polytechnic of Madrid. He researches in the food safety systems and environmental management systems and has published in high-impact journals about food safety and environmental management systems.

Dr. Mirko Marino currently works at the Department of Food, Environmental and Nutritional Sciences (DeFENS), University of Milan, where conducts research in nutrition, dietetics, food science, physiology, and cell biology. In particular, Dr. Marino is involved in the development of dietary protocols for the in vivo evaluation of the potential functional effects of sustainable foods and food models and the exploitation of in vitro approaches to study the potential biological mechanisms of dietary bioactives present in vegetable products. He earned his Bachelor;s at the University of Calabria, IT, in 2015, and his Master's degree in Human Nutrition and Food Science at the University of Milan, IT, in 2017. His thesis work aimed to study the association between childhood obesity, Vitamin D deficiency, and inflammatory status. He completed his Ph.D. in Nutritional Sciences at the University of Milan, in 2020. During his Ph.D., Dr. Marino was devoted to studying the Diet-Health relationship, mainly exploring and identifying the principal pathways related to oxidative stress, inflammation, and vascular/endothelial dysfunction which are at the basis of chronic disease development. After completing his Ph.D., Dr. Marino has been awarded two Type B research grants. The first is under the research program entitled "Study of the role of a plant product and its bioactive components in the modulation of the intestinal microbiota and cardiometabolic markers in overweight subjects". The second in the research project entitled "Development of sustainable food models and assessment of functional effects through in vitro and in vivo approaches". The research activity of Dr. Marino as a research fellow is mainly focused on the analysis of biomarkers of oxidative stress (e.g. DNA damage) and inflammation, the assessment of the nutritional status, and the detection of the food consumption of the subjects enrolled for dietary intervention studies. Dr. Marino has worked at the Department of Nutrition of UC Davis, Davis, California in the laboratory of Professor Patricia Oteiza. During that time, he studied the role of anthocyanins and their metabolites on the genesis of new mitochondria and the stimulation of white adipose tissue in an animal model of mice fed with a high-fat diet. Alongside, he exploited an in vitro model of pre-adipocytes in order to understand the potential mechanisms of action underline the browning process of the adipose tissue in response to certain diet components. The research activity of Dr. Marino is supported by 27 publications in peer-reviewed journals with a high impact factor in his scientific field.

Ana Ferreira holds a BSc in Cardio pneumology (Porto Polytechnic School of Health) and a MSc in Cardiovascular Pathophysiology (in Faculty of Medicine, University of Porto [FMUP]). In 2016, she started her career in cardiovascular research at Department of Surgery and Physiology in FMUP, where she has collaborated in studies focusing on cardiovascular remodeling and reverse remodeling (RR) in context of Cardiothoracic Surgery and Heart Failure cohorts. In 2019, she achieved a PhD Studentship financed by FCT. Since then, she has also explored the RR induced by pregnancy; as well as the impact of comorbidities (Arterial Hypertension, Diabetes Mellitus and obesity) and lifestyle (physical exercise, nutrition and chronic stress) on this process.

Dr. Amit K. Jaiswal is a lecturer of food technology and industrial biotechnology in the School of Food Science and Environmental Health at Technological University Dublin (TU Dublin) - City Campus, Ireland. He teaches food engineering, food processing technology and industrial biotechnology to undergraduate and postgraduate students. He is also the chair of the MSc program in Sustainable Food Safety Management at TU Dublin-City Campus. His research focuses on the conversion of lignocellulosic biomass into biofuels, biomaterials, and biochemicals, with an emphasis on novel process development and techno-economic analysis. He is also working on novel food processing technologies for functional and nutritional ingredient extraction from natural resources and biodegradable/compostable packaging materials development for the food industry. He is the author of more than 150 publications which include, book chapters, and journal/review articles, with an h index of 38 and over 5,000 citations.

Dr. Irene Dini is a researcher in Food Chemistry (CHIM 10) at the Department of Pharmacy - University "Federico II" - Napoli, a Specialist in 'Food Science' and PhD in 'Natural Compounds Pharmacologically Active'. She is a Research Professor in "Food Chemistry," "Spectroscopic Methods in Food Analysis," and "Science of Dietary Supplements of Plant Origin" at Federico II University. Dipak Ramji is Professor of Cardiovascular Science and Deputy Head at the School of Biosciences in Cardiff University. He is also Fellow of the Learned Society of Wales. He received his BSc (Hons) degree (Biochemistry) and his PhD (Molecular Biology) from the University of Leeds. This was followed by post-doctoral research at EMBL (Heidelberg) and IRBM (Rome) with fellowships from the Royal Society and the EU. His current research is focused on understanding how natural products regulate cellular processes in heart disease with the goal of attaining deeper mechanistic insight and identifying preventative/therapeutic agents. He has published over 150 research articles (h index 41 and i10 index 76 with over 8200 citations), including a 880 page book in 2022 on Methods in Atherosclerosis. He is an Editorial Board member of 16 international journals; regular organizing committee member, speaker and track/session chair at international conferences on heart disease; involved in grant evaluation for over 20 organizations; and supervised over 25 PhD students.

Sara Manti practices in Catania, Italy. Her top areas of expertise are Asthma, Cystic Fibrosis, Bronchitis, and Atopic Dermatitis. Her clinical research consists of co-authoring 118 peer reviewed articles in the past 15 years.

Zoubeida SOUIY is Assistant professor in Food Process engineering at Higher Institute of Technological Studies of Ksar-Hellal, Tunisia, from 2016. She obtained a master degree in process engineering from the engineering school of Gabes, Tunisia, in 2005. She obtained her engineering degree in foods industries (2002) from the Higher Institute of Food Industries of Tunis. SouiyZoubeida was one of the member committee (2018-2022) of the International Journal of Applied Research and Technology. She has several research works in the formulation and optimization of food manufacturing processes, Sensory, physicochemical, nutritional and microbiological analysis of food products, Hygiene and quality control; HACCP, ISO2200, Essential oil extraction, chemical composition by GC/MS, antioxidant and antimicrobial activity.

Sandrina Alves Heleno (SAH) graduated in Biotechnological Engineering in 2008, obtained her master's degree in Biotechnology in 2010 and the PhD in Sciences (Chemistry) in 2014. In 2015, she was awarded postdoc grant (2015-2018) and in 2018 she was awarded with a research contract through the Scientific Employment Stimulus (CEECIND/03040/2017) and currently she is a researcher at the Mountain Research Centre from the Polytechnic Institute of Braganca (CIMO-IPB). SAH research targets are the identification, separation, and recovery of functional molecules, as well as their implementation as ingredients and bio-actives in food, with an ultimate goalof extracting high added-value molecules and reuse them in the food chain (from agriculture to the consumer). Aligned with the recent global demands, SAH has been exploiting the agri-food sector, mainly in the valorization of bio wastes, optimizing and implementing greener processes, and optimizing ideal conditions of stability and safety for industry application. SAH has participated in national and international financed research projects, being the PI of some of them composed of multidisciplinary consortiuns with several renowned enterprises and research centers, promoting the technology transfer from academia to the industry. SAH research activity resulted in the publication of dozens of indexed journals, book chapters, patents, mainly related with the development of natural preservatives and functional foods. Moreover, SAH was awarded with several prizes, highlighting the first place of the European Social Innovation prize (50.000 Euros) and three National prizes (2 BornFromKnowledge,1 CA Creditoagricola (10.000 Euros). One of the international patents leaded to the creation of a spin-of (Tree Flowers Solutions) dedicated to the exploitation of the developed technology, a natural preservative. SAH also edited a book: Natural Secondary Metabolites - From Nature, Through Science, to Industry, from Springer Nature. She has also organized several scientific events and currently has a team composed of several researchers, post-doctoral and PhD students. SAH also evaluates international projects and Pod-doctoral grant programs. She is also a key researcher of the collaborative laboratory AquaValor and is also part of international alliances such as PANDA (Pan-Balkan Alliance of Natural Products and Drug Discovery Associations) being a Portuguese representative in the management committee since December 7th 2020. SAH teaches different master and graduation classes in the field of food science and technology.

Dr. Alejandra B. Camargo is Professor of Analytical Chemistry at the School of Agronomy, University National of Cuyo, (UNCUYO) Mendoza, and Independent Researcher at the Institute of Agricultural Biology (IBAM), UNCUYO-National Council of Scientific and Technological Investigations (CONICET) in Argentina. She obtained her degree in Food Science in 2001 and her Ph.D. in Biochemistry in 2007 at the School of Chemistry, Biochemistry, and Pharmacy of the University Of San Luis Argentina. Her earlier research focused on the development of analytical methodologies for the determination of bioactive compounds, and then she extended her investigation studying food-medicinal chemistry employing QSAR models in the last decades. Her research aims to investigate the impact of plant food bio-actives on health, with a strong focus on understanding the bioavailability, metabolism, and cardiovascular health benefits of organosulphur compounds. Her expertise includes the development and validation of analytical methods for the identification and quantification of phytochemicals in foods and biological samples. Additionally, she studies the impact of domestic and technological practices on bioactive compounds bioactivity.

Baher Effat is a Research Professor of Food and Dairy Microbiology, National Research Centre, Egypt. Over 36 years of experience in Food and Dairy Bacteriology, he shared and supervised over than 6 Master and Ph.D Thesis in Food and Dairy sciences and more than 68 scientific publications in food and dairy microbiology, functional dairy products, probiotics and propionic acid bacteria and pathogenic bacteria and in Food and Dairy Products. He has shared in national and international programs and projects. He joined many international conferences and workshop, in addition to scientific activities. In addition he awarded for CAS-TWAS Visiting Scholar Fellowship from 03 Aug., 2006 to 31 October 2006. Lecturer in Faculty of Engineering Sciences and Technology, Sabha University, Libya for 3 years from 1994 to 1997. Training of young researchers and lecturers on many science-related subjects; including courses for: Microbiological Analysis of Food, Control of Bacteria, Contamination during Food Process and Isolation and Identification of Microorganisms. He is a member of the Editorial Board of several international journals. He has published more than 140papers in reputed journals and has been serving as an editorial board member of repute in several national and international journals. His research interests in food processing engineering and flavor chemistry; design and fabrication of food processing in different factories; chemical and physical food processing engineering; identification and characterization of phytochemicals; sensory science.

Dr Adeela Shahid is a Professor and Head Department of Physiology at Shalamar Medical & Dental College, Lahore, Pakistan. She has done MBBS, M Phil, PhD and is certified Medical Educationist. She is Adjunct Professor of University of Health Sciences Lahore, Pakistan and University of Lahore, Pakistan. She is Editor in Chief of the Journal of Shalamar Medical & Dental College (JSHMDC). She is chairperson of student's Institutional Review Board of Shalamar Medical & Dental College, Lahore, Pakistan. She has also worked at University of Health Sciences, Lahore, Pakistan, involved in teaching Postgraduate students. She has a vast experience of supervising postgraduate students of M Phil, FCPS, PhD. She is a member of several Editorial Boards of National & International Journals. Her most of the work is on obesity, diabetes mellitus and hypogonadism. She has reported leptin gene mutations and single nucleotide polymorphisms in obese Pakistani population.
